My family recently visited our local IHOP restaurant to check out the newest offerings on the SIMPLE & FIT menu. We tried out the Whole Wheat Pancake combo, Whole Wheat French Toast combo, Banana and Brown Sugar Oatmeal and the Spinach & Mushroom omelet.  Everything was delicious and very satisfying! The whole wheat pancakes were so fluffy and hearty and were just as amazing as the original variety. My son really enjoyed the banana and brown sugar oatmeal. His bowl was left spotless! We were very please with the lower calorie options and did not feel robbed of quality, taste or portion size. We will be making another trip soon to try some of the other items. I have crepes on the brain!

Food Lion Ambassador Shopping Trip & $50 GC Giveaway

Hey guys! If you live in an area with a Food Lion grocery store, you might have noticed some changes in some of the stores. They have been updated, making the store look brighter, more inviting and very organized. The shelves are well stocked with a lot of the great name brands you use as well as the Food Lion brand of items including the "My Essentials" line. I received a very generous $150 gift card through Mom Central as a Food Lion Ambassador and got to see how far I could stretch it. I was totally up for the challenge! I made my list and headed to a brand new store that recently opened in my area.
I will say that the first thing I noticed was the gorgeous produce department filled with such beautiful, fresh fruit and vegetables. I pleased with the prices and quality. I did grab some essentials as well as a few extras for some special meals. The prices on the organic items were very fair.  I went up and down each and every aisle and compared prices on both name brands and the store brand. I found that some staple items I buy were a lot cheaper such as sugar, iced tea bags, flour and a lot of the non-grocery, household items. Now the make it or break it part of any store for me is the meat, poultry and seafood department. I was really happy with the prices, especially on beef. I don't buy beef often because it is usually way too expensive. I was so happy to be able to buy enough protein items for almost 2 weeks without feeling like I was going to have to take out a loan to pay for my groceries.

Something that really got me excited is the selection of ethnic food products that they carried. I use certain types of seasonings are very hard to find in my city and I found them there! Not only did they have more than I would ever want, the prices were SO LOW! *happy dance* My overall shopping experience at Food Lion was a wonderful one. I was treated well and felt like everything was very easy to find and I did not feel like the store was cluttered. I also was able to walk out with a very full cart load of groceries and household items and still have a small balance left in my gift card!
Here are some of the great items I received in my Food Lion Ambassador Kit. 
I love the wooden recipe card box that came with a nice set of recipe cards. I asked my teenage daughters to pick something they wanted me to make and surprise, surprise... they picked something sweet. They chose the "World's Best Chocolate Chip Cookies" recipe. I did ask after all!
I purchased almost all of the ingredients in the store brand with the exception of maybe 3 things I already had at home.
I have made many chocolate chip cookies in my lifetime and I have my usual go-to recipe that I have used for years. I decided to try out the Food Lion recipe. I won't lie, I was a bit nervous because I have never made any baked goods with store brand items. Oh my gosh, they came out AMAZING! They were a bit flatter looking than what I am used to but the taste... I can compare it to a local bakery that sells their chocolate chip cookies for $1.29 each! They had a great chew and crispiness at the same time and were not too sweet. I separated the dough and added pecans to one half since the girls like them with just chocolate chips. I absolutely must share this recipe!


What you will need:
2 cups all-purpose flour
1 tsp salt
3/4 baking soda
2 sticks unsalted butter
1 cup white sugar
2/3 cup packed brown sugar
2 tsp pure vanilla extract
2 eggs
1 11.5 ounce bag of chocolate chips (I used milk chocolate)
1 cup chopped walnuts or pecans (I used 1/2)

Directions:

1. Preheat oven to 375 degrees or according to how your oven bakes.
2. Mix flour, salt and baking soda together; set aside
3. Beat butter for 1 minute or until smooth. Add the sugars and beat for another 2 minutes. Add the vanilla and eggs, one at a time, beating for 1 minute after each egg goes in.
4. Reduce speed to low and add the dry ingredients in three portions, mixing until each addition is incorporated. Fold in the chocolate chips and nuts.
5. I then chilled the dough for it to firm up and formed them into balls. I baked them on a cookie sheet for about 11 minutes and transferred them to cooling racks.

Apparently my family thought the cookies were an appetizer for dinner! Speaking of dinner....
I made this for dinner the same day I baked the cookies. I bought some fresh rib-eye steaks that I pan seared in my cast iron pan, sauteed mushrooms & onions, homemade garlic mashed red potatoes and some sauteed zuchinni & squash topped with Parmesan cheese. This meal fed my family for only $24. Not bad and you won't be able to get that price at any restaurant!

How chicken got me a husband (True story)

I can remember in late Summer of '91, Dwayne and I went to Miami Beach to take a dip in the ocean and have a little cook-out . We took along food, drinks and a small charcoal grill. I had pre-seasoned some chicken wings to cook on the grill. Dwayne and I were very young, so he really had not really tasted a lot of my dishes. This was the first time he would get to try my barbecued chicken wings. He took his first bite and closed his eyes. He yelled out how good it was and he was amazed at my cooking skills. He then goes on to tell me how me could totally marry me because I knew how to cook chicken. Can it get any more romantic than that? Turns out he was dead serious. The man loves his chicken cooked just right! 


Speaking of chicken, I wanted to share the latest product I tried courtesy of Lawry's and BzzAgent. It is the Lawry's Santa Fe Chili Marinade. I poured the marinade on some chicken wings and added a few dashes of garlic powder, Lawry's Seasoned Salt and some cracked black pepper. I let it sit in the refrigerator for about an hour and then I cooked them in the oven using the broil/bake method. 35 minutes later we ended up with some of the best tasting chicken wings my family had ever had. I regret not cooking more of it because they were just that delicious! I highly recommend you try it out for yourself.

Hey guys! I wanted to share my review of 8th Continent Soymilk. I have always heard about the great health benefits of soy and thought I would check it out for myself. The girl in me just loves the fun prints on the cartons. Who wouldn't want to drink something that came in such a happy container? I was really amazed by the very long shelf-life, refrigerated of course. I picked up the Original variety to try out. I confess, I am not a big milk drinker so I have to drink mine out of a wine glass :) You know what? It was very delicious! I prefer the taste over traditional cow's milk. 8th Continent Soymilk comes in 8 varieties ~Original, Light and Fat-free versions including Chocolate and Vanilla. My husband wants me to buy the Light Vanilla so he can use them for his protein shakes.
I was checking out the website and I did not realize you can substitute 8th Continent Soymilk in almost all your recipes. They have some really nice recipes from all different categories. Char Crust® Dry Rub Review & Giveaway

I received 4 boxes of Char Crust Dry Rub Seasoning in 4 varieties (Roasted Garlic Peppercorn, Ginger Teriyaki, Amazin' Cajun and All American Barbecue) to try out. Since I am a big at-home cook I was very eager to try it out. I decided to go with the All American Barbecue flavor. I really did not know what to expect. I am the type of cook that has an arsenal of seasonings. I literally use about 10-12 items for one dish. I figured I would grab some chicken and see what happens...

I opened the box and it contained a packet of the dry rub seasoning. I poured some onto a plate and pressed my boneless, skinless chicken thighs into the rub and coated them all over. There was a tiny part of me screaming to add some of my own flavors but I quickly shut myself up *ahem*

I had my trusty cast iron griddle heated up and coated the surface with some Canola oil. I added my chicken and let it sizzle for a few minutes. When I flipped them over a tiny bit of panic came over me because I thought I might have burned them! Turns out they were "charred" brown.. very brown! 

I transferred my chicken to a smaller cast iron skillet after browning them and popped them into the oven to be sure they cooked all the way through. I heated the oven to about 400 and cooked them for about 10 minutes. 



Now came the moment of truth. Tasting it. Oh my googlie goo it was so juicy and tender!! The flavor was a perfect blend of 'sweet heat'. I was so surprised and pleased with it and was I ever so happy that I opted to not add anything else. It has a great kick that I noticed intensified when it was reheated. Next time I cook the chicken like that I want some big, fluffy whole wheat rolls and some fresh crunchy veggies to make some sandwiches. I am already planning what types of dishes I will make with the remaining varieties. The great part for a busy mom like me? It was so fast and easy! It was interesting too that these rubs are one of the very few certified Kosher rubs and are low sodium. I was so happy to find out that one of the local butcher shoppes located about 5 minutes from my home carries Char Crust dry rubs! You can see if there are any locations near you here. Old Orchard Cranberry Naturals Juice Review + Giveaway


I received a couple bottles of Old Orchard Cranberry Naturals juice to try out in the Cranberry-Grape and Cranberry-Raspberry varieties. I was a bit hesitant to taste the juices because it is a "reduced calorie" drink. It is naturally sweetened with Truvia and I just wasn't sure what I would think. Truvia is a natural, zero-calorie sweetener that is made from the stevia plant. Since it is natural there is no effect on blood sugar or glycemic index. This is good news since I have found that "diet" drinks make me put on weight!

I tasted the Cranberry-Raspberry and to my surprise it was very crisp and refreshing with the right amount of tart/sweet balance. I served some to some guests that visited my house over the weekend and I asked them if they liked it. Everyone said that it was good and had a nice flavor. When I told them it was sweetened with Truvia they thought I was lying! Even my hard to fool husband was impressed with the taste and did not notice the difference from the regular blends.

Balsamic Cornish Hen & Roasted Potatoes | The Olive Tap Review

I received some samples of Tuscan Herb Olive Oil and Aceto Balsamico Di Modena (4 leaf quality) Balsamic vinegar from The Olive Tap. I can't even begin to tell you how amazing both products are. The olive oil is the best I have ever tried, hands down. I usually go with a plain olive oil and use herbs and garlic with it to take it to the next level. I am so glad I did not do that with the Tuscan Herb olive oil. I was amazed at all the rich flavors of herbs and garlic that you get hit with (in a good way of course). It went so well for dipping crusty bread. As a matter of fact, the entire family tried it and loved it.

I was stumped with what to cook for dinner one day and remembered I had purchased some Cornish hens and a bag of potatoes. This is where the balsamic vinegar came in...


I took the Cornish hens and split them down the middle of the breast side and seasoned them with a few of my favorite dry seasonings and drizzled them with the balsamic vinegar. I roasted the hens for about 40-45 minutes until I achieved a rich color and of course until they were cooked properly. While the hens were roasting I washed, cut and seasoned some potatoes with some sea salt, cracked pepper and the Tuscan herb olive oil. The potatoes roasted in the oven alongside the hens. The end result was the most flavorful and succulent poultry, as well as perfectly delicious potatoes. The family raved about this dish and the girls told me to add this recipe to the book I am making for both of them when they go off to college.
