Fruit Vines Bites - Perfect for road trips

Although the summer is almost over, there is still time to fit in some day trips before back-to-school. We traditionally sneak away right before school starts just to refresh our minds for the non-stop weekdays ahead. We always pack snacks, drinks and food to take with us. One of our new favorite is Fruit Vines Bites by the makers of Red Vines. 

They come in 2 flavors- Strawberry and Cherry. I received a box filled with both varieties in 3 sizes-- resealable 10 oz. stand-up bag allows for portion control,  2 oz. single-servings for quick trips and 5 oz. bags for sharing. 

Honestly, I don't know about sharing. These bite-size candies are irresistibly soft, chewy and fruity. I think the 10 ounce stand-up bags are good for portion control. We can easily eat more than our share! Fruit Vines are also low-fat and preservative-free for guilt-free snacking. They would be perfect in school lunch boxes too. 
These are going with us when we take a little road trip later this week. You can find Fruit Vines Bites at many retailers including Target, Walmart, Walgreens and more. I saw them at Target today and think they would make a nice "just because" treat for my little one's teacher. IHOP's New World Scrambles (Review)


Last week I visited my local IHOP to check out the latest World Scrambles menu offerings with my younger daughter. I think everyone else had the same idea to visit IHOP at the exact same time so the restaurant was slammed! I decided to go with the Californian Scramble and my daughter went with the All-American Bacon Scramble.
Each World Scramble is made to order and perfectly paired with golden hash browns and your choice of a warm flour tortilla, toast, or two of IHOP restaurant’s classic buttermilk pancakes. You can also add bacon or sausage for an additional cost. We both when with the famous IHOP pancakes. 

When my entree came, I was a bit overwhelmed by the amount of salsa that was on top of my eggs. You can't really tell from the photo, but there was fresh avocado slices underneath the salsa that made it look like it was way more. The whole combination of the eggs, cheese, salsa and avocado screamed California! My mouth was happy. I did not leave a single bite on my plate. I was very satisfied and really enjoyed the Californian Scramble. 
My daughter kept things simple with the All-American Bacon Scramble. She was pleased with how much bacon was incorporated in the eggs and liked the fresh bite of tomatoes as well. I think she said she would be full for the next three days after she finished her meal!

Easy Recipe-- Mini Cheesecakes

If you love cheesecake, are pressed for time or feel like you are a baking-dummy, this recipe is for you. It requires so few ingredients and bakes up in just 20 minutes. 
Ingredients:
2 8-ounce packs of cream cheese, softened
2 large eggs
1 cup of sugar
1 tsp pure vanilla or almond extract
12 vanilla wafers
Fresh fruit or topping of your choice

To make:
Heat oven to 350 degrees. Line muffin tins with 12 paper cups and place one vanilla wafer in the bottom of each cup. Blend cream cheese with a hand mixer until fluffy. Add sugar and beat until mixed. Add eggs, one at a time until well incorporated and then vanilla extract. Fill each cup with cheesecake mixture. Bake for 20 minutes and let sit out on a cooling rack in the muffin pan for about 20-30 minutes. Transfer pans in to refrigerator and chill for a minimum of 2 hours. Overnight is best.
These mini cheesecakes are delicious with fresh berries and are great for portion control. You can double the recipe for parties.  It's so easy and absolutely delicious.  I have been making them for 20 years now! It's a family favorite. Let me know if you try this recipe. Enjoy :)

Next, you can view the menu items which range from platters & trays, giant subs, to-go boxed meals, dessert, sides and drinks. The offerings vary by store. Here is an example of what it looks like:
You can select what types of entrees you want. I went with the Classic Combo Platter and was able to pick which variety of bread I want, cheese or no cheese and all of the toppings and sauces. 
I went with the option of having a variety of breads and I am so glad I did! If your guests might be picky about toppings, you can opt for a toppings platter so they can pick and choose as they please. Once you finish with your order, choose your pick-up date/time, you then pay for it online. You can even use a SUBWAY gift card like I did. It's a very quick process and you will receive an email with your order number. I suggest signing up for an account because YOU WILL need it for future orders. The entire ordering process took me about 20 minutes. Imagine not having to make a shopping list, go to the grocery store, shop around for ingredients or stand in line to pay for it all. Oh and you are bound to forget something along the way! SUBWAY Catering really made this task so easy. 

I threw a mini belated birthday/you-are-doing-a-super-job in school party for my son William. We purchased some Power Rangers themed decorations, plates, napkins and cups from Party City. They had everything we needed and it was easy to get in and out of the store. I called ahead to my local SUBWAY store that I placed my order to make sure it would be ready for my 11:30 AM requested pick-up time. It turned out that my order was ready ahead of schedule. I made the quick five -minute drive and my order was handed to me right away. I had such a great experience with the staff and they even offered additional plates and napkins for my party. Everything was put together so nicely.

It was so nice having a variety of subs that everyone found something (or several things) they liked. The cookies were very fresh and chewy the way my family likes. 

My son is my picky eater and he enjoyed his sub. I had to take the toppings off of his. The bread was so fresh and soft, so I think that encouraged him to eat it all. Our family enjoyed everything! This was truly the easiest party I have ever planned. I was discussing future events and already know that the menu portion is taken care of. I may never cook for a party again! Red Robin introduces new Interactive Allergen Menu ($25 RR GC Giveaway)

May is National Allergy Awareness Month. Red Robin restaurant has come out with a new Customizer Hub for guests to to modify their food or beverage order to suit their taste or dietary preferences. If a guest has a food allergy, the Red Robin team member will ring in the order with an allergy alert and bright type so it is clear on the table order. The Customizer Hub is so easy to use and starts out by letting you choose your allergen-specific triggers. Here is what it looks like:
Once you pick the ingredients to avoid, you can go into specific menu categories or choose from suitable options to customize your meal. 
What makes this so great is that they offer suggestions on what is suitable and also foods suitable with modifications. My daughter was able to order a Teryaki Chicken sandwich and we requested it with no mayo. We have some good family friends who have food allergies and sensitivities that we frequently meet up with at Red Robin for lunch or dinner. I have introduced them to the Customizer Hub and they are thrilled with how much easier it is to order their meals. It helps to be able to know in advance what menu item ingredients are and what to avoid. 
Red Robin offers so many choices that are sure to satisfy any taste. I couldn't go to my favorite burger place without having an actual gourmet burger. I tried one of their newest burgers called the Black and Bleu. Oh my word, it was hands-down the BEST burger I have ever tasted. It starts off as a juicy, half- pound Black Angus burger {handmade and flame-grilled to order} and is topped with sautĆ©ed, blackened portobello mushrooms, grilled onions, house-made Bleu cheese sauce and Bleu cheese crumbles with Dijon sauce on a Ciabatta bun.  It says that it's a "fork-and-knife" type of burger. That is exactly how I ate it!
My husband was commenting how family-friendly Red Robin is. We noticed a lot of birthday gatherings as well as large groups while we were there. I highly recommend you give Red Robin a try if you haven't already.

Cinnamon Swirl Brioche French Toast & "Morning Toast" Beverages at IHOP for a limited time

Kicked-up Baked Beans (Easy Weeknight Recipe)

Need a quick meal idea for the work week? Try my easy Kicked-up Baked Beans and have a hearty meal on the table with minimal effort. 

Ingredients:
2 Cans of Bush's Grillin' Beans (I use 1 Bourbon & Brown Sugar and 1 Steakhouse Recipe)
Andouille Sausage (or your favorite sausage) cut in small chunks
2 tbsp very finely diced onion
2 tbsp chopped cilantro
1/2 tsp garlic powder
cracker pepper to taste
1 tbsp brown sugar
a few dashes of Cajun seasoning  (I like Tony Chachere's)

Heat oven to 375 degree. Place beans in the bottom of a casserole dish. Add sausage and remaining ingredients. Lightly stir to combine everything. Bake for about 30-35 minutes. Enjoy over your favorite rice.

You can easily adjust any of the ingredients to your liking. Andouille is spicy so you have to go easy on which seasonings you add. Let me know if you try this recipe.

Try Matlaw's Stuffed Clams for your Super Bowl party

I received samples for an honest review. All opinions are completely my own. 

It is football and basketball season and we have been tuning into the games as often as possible. We traditionally have friends over to watch the Super Bowl game and I have been putting together my menu of goodies to serve my guests. I was so lucky to receive some Matlaw's Stuffed Clams to review. These stuffed clams come frozen and are made from quality ingredients. 
I just love that the stuffing for these appetizers are filled into real clam shells. I used the oven bake method of cooking them. You can also grill or microwave them. I lined a baking sheet with foil and placed my clams on it. 
They went into a 450 degree oven 30 minutes and came out a gorgeous golden brown color. My kids were lured into the kitchen because of the wonderful smell that lingered in the house. 
We all tried them with a couple splashes of hot sauce for an extra kick. Oh boy, they were good! My husband really enjoyed them and my sometimes finicky teens loved them too. The stuffed clams were packed with flavor and had a light texture at the same time. The clam pieces were not rubbery at all. Overall, it was a perfect balance of savory flavors. 
I can already picture these stuffed clams on a platter lined with some fresh greens and lemon wedges for presentation at my Super Bowl party. I also love the idea of having them as a side dish when we do a crab boil. You can't beat the convenience of simply popping them in the oven or on the grill for a quick satisfying snack or appetizer. If you haven't tried Matlaw's Stuffed Clams before, I suggest you look for them. They are awesome! Extra Crispy Chicken Wings from your oven (Recipe)

With football and basketball season in full force, we reach for our game food favorites. One thing that we must have for the Superbowl or NBA Finals is chicken wings. We love them cooked almost any way, but absolutely can't resist a crispy fried wing. The problem is, I do not like to fry. I fry *maybe* three times a year. I just don't like the house, our furniture or my hair smelling like fried food. I have been baking wings in the oven for years and finally found a way to make them so crisp, you would think they were deep-fried. The secret is Dijon mustard. 
I take my washed and dried chicken wings and season them with my favorite spices and seasonings, except for salt. I add a couple tablespoons of Dijon mustard (this is why I don't add salt) and toss the wings to coat evenly. I spray non-stick cooking spray on a broiler pan/drip pan and lay my wings out in an even layer. I put them in my preheated oven on 375 and use the convection setting. I let them get very brown and crisp. It takes about 35 minutes. If you don't have a convection oven, you may need to flip wings over once for even browning. The end result is perfectly crispy chicken wings. My family enjoys them and I like the fact that I can cook a lot of them at one time. Enjoy!

One of America's favorite times of year is here--- the return of football season! Buffalo Wild Wings is the go to place for family, fun and football. After all, wings are the staple food when watching football. We love the flavor varieties that BDubs offers. Even if you can't make it into the restaurant, you can order take-out and enjoy your meal in the comfort of your own home. If you are like me, you can get rather messy and a bit unladylike with chicken wings! We have ordered out several times since BDubs opened in our area. On occasion me and my husband will go up there for a meal and a few beers. There are so many promotions going on at BDubs right now like the Game Changer BeerWing TuesdayBottomless Boneless Lunch, and Boneless Thursday.  I think I need to call up a friend to meet up this month for that Bottomless Boneless Lunch special! I think I can be a lady when eating the boneless wing variety. My mind is also on the Game Changer Beer. Just the name makes me want to go try it out! My family is looking forward to football season and can't wait to dive into some of the great offerings this month from Buffalo Wild Wings.
