Easy Cheesy Stuffed Zucchini Recipe

I am a huge fan of all things vegetables, but unfortunately that's not really the case for my family. We try to have vegetarian meals a couple times a week and I feel like I get stuck making the same old things. One of my favorite summer vegetables is zucchini. I can eat it prepared in any way-- sauteed, baked, in soups or stews, and even raw with dips. My husband and daughters do not share my love of zucchini at all. I decided to come up with a way to make them at least give it a try again. I figured a little cheese and savory flavor would help with those picky eaters. I came up with the perfect dish that is big hit with my family. My husband had to admit that zucchini isn't as bad as he thought it was.

Ingredients: 
3-4 small zucchini 
4 ounces (half pack) of cream cheese 
Grated Parmesan cheese 
Garlic powder
Cracked pepper
Red pepper flakes (optional) 
Feta cheese
Seasoned bread crumbs 
Olive oil for your baking dish

Directions:
Spread cream cheese mixture evenly in the zucchini halves (layer will be thin). Sprinkle a little bit of feta on top of cream cheese mixture and then follow with the bread crumbs. Just a little of both will do. Bake in oven uncovered about 35-45Preheat oven to 375 degrees. Lightly coat a baking dish with your favorite olive oil and set aside. Cut the ends off each zucchini and then slice lengthwise in half. With a spoon, scoop out the seeds without taking away too much of the flesh. Mix cream cheese with a few sprinkles of Parmesan cheese, garlic powder, black pepper and crushed red pepper flakes to taste.  minutes depending on how big your zucchinis are. You can insert a fork to check for doneness. Enjoy!

You can serve this recipe as a side dish or even a main dish. Feel free to add or take away any ingredients to make it your own. Let me know if you try it!

Fruit Vines Bites - Perfect for road trips

Although the summer is almost over, there is still time to fit in some day trips before back-to-school. We traditionally sneak away right before school starts just to refresh our minds for the non-stop weekdays ahead. We always pack snacks, drinks and food to take with us. One of our new favorite is Fruit Vines Bites by the makers of Red Vines. 

They come in 2 flavors- Strawberry and Cherry. I received a box filled with both varieties in 3 sizes-- resealable 10 oz. stand-up bag allows for portion control,  2 oz. single-servings for quick trips and 5 oz. bags for sharing. 

Honestly, I don't know about sharing. These bite-size candies are irresistibly soft, chewy and fruity. I think the 10 ounce stand-up bags are good for portion control. We can easily eat more than our share! Fruit Vines are also low-fat and preservative-free for guilt-free snacking. They would be perfect in school lunch boxes too. 
These are going with us when we take a little road trip later this week. You can find Fruit Vines Bites at many retailers including Target, Walmart, Walgreens and more. I saw them at Target today and think they would make a nice "just because" treat for my little one's teacher. Get ready for back-to-school with Fiskars #ad

As we near the end of July, it's time to start preparing for back-to-school. This means clothing, shoes, backpacks and school supplies. My kids have always enjoyed buying school supplies even if they aren't overly enthusiastic about going back to long school days and homework. I'm a big believer in buying quality school supplies and don't mind paying a little more for items that will last longer. Fiskars school scissors have been the only brand I have purchased since the pre-school days. My youngest child had the training scissors that were so important in helping his little hands master how to cut paper. 
Fiskars makes sizes and varieties for all different needs. I love the fun bold colors they now make. The quality is the same that it has always been. I don't think my kids have ever broken a pair of Fiskars scissors before. They are just that durable.
I love the non-stick blades. They give a clean cut.

I recently learned about Cimorelli, a six-sister a cappella group which performs original and top hits.

They are a YouTube sensation and I must say, those girls can sing! I watched a few of their music videos and found myself dancing in my chair. I love their cover of "Treasure" by Bruno Mars. My younger daughter walked in on me checking out some of Cimorelli's videos and she was like, "Hey, I know who they are! I saw them on a SUBWAY commercial!" And here they are in their latest SUBWAY commercial...

 
The Cimorelli sisters are signed to Universal Music’s Island label and have more than 700 million YouTube views.  “Summer with Cimorelli,” the sisters’ new AwesomenessTV web series, served fresh by SUBWAY, premiered at the beginning of June and their fans have been going crazy for it!  The six-part series takes viewers into the world of a family on the verge of musical stardom.

I was able to chat with them in a Google Hangout last week and they all remind me of my own daughters. Their mother is a music teacher and that's what started it all. They have been having a blast filming their web series and it's full of parties, singing, a monkey (yes, a MONKEY) and tons of shenanigans. No worries, there are many learning lessons along the way.

So I confess, I have watched all of the episodes they have posted and I might be just a tiny bit hooked and anticipating the next one. Here's the first episode. Don't get mad if the theme song gets stuck in your head ;)

IHOP Summer Signature Pancakes Review

I headed over to IHOP this week to check out the Summer Signature Pancakes. I had the hardest time trying to decide which variety of pancakes I wanted. 
The choices were:
Strawberry Banana Cream Pie Pancakes: Buttermilk pancakes layered with banana cream, topped with glazed strawberries & sliced fresh bananas bring the delicious flavor of everyone’s favorite summertime pie to the breakfast table.

Raspberry Peach Pancakes: Buttermilk pancakes topped with juicy peaches & drizzled with raspberry sauce that pairs two of summer’s most popular fruit flavors.

Blueberry Cannoli Cream Pancakes: Buttermilk pancakes topped with blueberry compote & perfectly sweetened Ricotta captures the essence of this classic Italian dessert.

I finally decided on the Raspberry Peach Pancakes and made it regular combo with 2 eggs, 2 slices of bacon and hash browns. I also had the option of choosing just the pancakes, which comes with 4.
I love the pancakes at IHOP even without toppings so I was so excited to try these. It was love at first bite. The raspberry sauce was perfectly sweet and tart and the peaches were crisp and delicious. These pancakes certainly tasted like summer!  I ate every last bite and almost wished I had ordered the 4 pancakes instead! Of course, the combo items were delicious and both plates were empty. Aside from how satisfied I was with the taste, this entree only cost $5.99! Of course, prices may vary by location.  Impressive for such good quality as well as quantity. I will have to take my husband to try these pancakes next week for his birthday.

Beat the heat this Summer with Bomb Pops from Publix (Giveaway)

School's out, the temperatures have been in the 90's and the days are long... It's Summertime! One of my favorite Summer treats since childhood is the Original Bomb Pop. Do you remember them? I have memories of running after the ice cream truck every day to get my hands on one!
There is something about the flavor combination that can't be beat. Cherry, Lime and Blue Raspberry are so refreshing. I'm so amazed that they still taste the same after all these years. The thing that makes a Bomb Pop so special is the texture. It's smooth and not crunchy and icy like most frozen treats. They are so good! I was so surprised to see how many different Bomb Pop flavors are available. I saw the Hawaiian Punch, Watermelon and Original varieties in my local Publix store the other day. I want to check a couple more locations for the Banana Fudge flavor. Doesn't that sound delicious?
I have to make sure to stock up on some Bomb Pops for when the kids have friends over throughout the summer. Our whole family loves them so you can never have enough! Summertime with Santa Cruz Organic Lemonades- Review & Giveaway

One of my favorite beverages to drink throughout the summer months is lemonade. I love different flavors too-- strawberry, cherry and mango to name a few. I tried the Santa Cruz Organic brand for the first time this week. My husband was so curious about what the mango lemonade would taste like, so we tried that one first. Before I actually took the first sip, I sniffed it. It smelled as if I just peeled a fresh, ripe mango. I went in for the first taste. It was like a mango and lemon explosion in my mouth. I was able to taste each flavor and combined, it was fantastic! I love that it was not too sweet and had the right amount of tart bite to it. My husband really loves the mango variety and has claimed what's left in the bottle for himself. That shocked me because he is a very traditional person when it comes to food or drink. He usually sticks to original flavors.

I love that these lemonades are made with no artificial ingredients or preservatives and are packaged in shelf-stable glass bottles. That makes it perfect for stocking up when they are on sale. I noticed a big end cap of them at my local Kroger the other day, so I hope to grab a few bottles of other flavors to try in the future.

I have the best summer hair with Pantene Ultimate 10 BB Creme #PanteneBBCreme

It's that time of year. The time when the weather is hot, sticky and the air is humid. We had at least 3 weeks straight of heavy rain and storms. This means one thing, unruly hair. Like most people, the humidity makes my hair misbehave. It becomes frizzy, crunchy and just crazy looking. I received a Klout Perk from Pantene and Walmart a couple weeks ago that included their latest product, Pantene Ultimate 10 BB Creme.

I have heard of BB creme for your face but never for hair. I was very interested in finding out how it actually worked. It is supposed to care for your hair and style it all in one step. You can apply it to wet or dry hair. I tried it on wet hair since I blow dry and heat style. Immediately I noticed my hair felt very soft. Normally when I blow dry my hair, I have to curl it after or it will look frizzy. With Pantene BB creme, I could totally get away with just a blow dry. That is how I know it worked well! Even when I wake up the next day, my hair would feel so smooth and healthy.

My daughter took this photo of my hair (it was curled) from the back to show you how shiny and controlled it looks using the product. Would you believe that with all that hair, I did not use a conditioner after shampooing? I only used the BB creme.
To see if this stuff works on different hair types, I had all 3 of my kids use it. The oldest used it in her natural curls and loves how soft, controlled and calm her curls are. My younger daughter used it in her already dry and flat ironed hair. You could see an actual difference in how her super thick hair looks. She tends to have big hair and this products helps her hair to lay a bit flatter and it looks and feels softer. My little boy has wavy hair and the BB creme gives just enough moisture to help control his waves. We all love it and can't wait to buy other products from the line. The BB Creme is just over $6! Despite the 3 weeks of rain we have been getting here in South Carolina, summer is in full swing. This means I am wearing more shorts, skirts and tank tops. The true test was what my skin would feel like the next day. My skin felt as if I had just applied moisturizer... amazing!! It even worked on my son's scaly skin. Normally we have to apply lotion or cream to his skin at least twice a day. That is not the case with Sixteen30 dry skin repair. Besides the effectiveness of product, it is great knowing they are made of all natural ingredients. I have tried many lotions and creams over the years and this one has exceeded my expectations! I highly recommend it for anyone who needs maximum moisture that will last. Carmex Summer Giveaway

Hey guys! It's been a while since I have gotten to test out some new goodies from Carmex. I just received this cute beach bag and 6 Carmex sticks just in time to replenish our supply. Yes, I said supply. We always keep extra Carmex on hand! Carmex sent us the sticks in all 6 flavors- Original, Strawberry, Cherry, Lime Twist, Vanilla and the brand new Pomegranate.

I have lemons! (okay just a lemon)

I am so thrilled that my dwarf Meyer lemon tree has a lemon on it! I was really sad that after all the blooms that it started with, all of them fell off except one. Thankfully there are some new blooms that started growing this week so I will keep my fingers crossed that we will get a couple more lemons before it's all said and done.
With all the rain we have been getting in the past few weeks, our flower garden has been doing very well. Just about everything has bloomed! The fuchsia lily (calla lily?) took 3 years to finally bloom. The orange lilies really did well this year for the first time since we planted them a couple years ago. We also have some Zinnias that are steady blooming bright pink and orange flowers. Our Lantanas always do well and if I can get my hands on the "fruit cocktail" colored one on clearance, I will buy one. 


We got some more flowers from my hubby's uncle that we need to get into the ground for next year. Almost all of our flowers in the garden came from second hand plants. You can't beat that! Maybe we should call it our bootleg garden :) At least we are helping out the honeybee population, right?
