Have you tried the new Cool Whip Frosting yet? #coolwhip

Did you know that Cool Whip now makes frosting? I was thrilled when I first heard about it on the Facebook page and couldn't wait to try it! Lucky for me, my friends from Kraft Foods sent some in all three flavors-- Chocolate, Vanilla and Cream Cheese.
So far, we have tried the cream cheese variety on triple chocolate cupcakes, with sprinkles. We all loved it! It had a nice cream cheese flavor and had that amazing "whipped" texture you can only get from Cool Whip. 
Next up, vanilla on red velvet cupcakes. I know you are thinking, "why didn't you use the cream cheese on the red velvet and the vanilla on the chocolate?" Eh, I figured why not! We all preferred the vanilla flavor over the cream cheese and have yet to try the chocolate. I anticipate that will be very soon since there are two teenage girls that reside in our home bugging me half to death requesting we try it asap!
I am thinking about making a white cake with the chocolate variety and possibly a carrot cake for the cream cheese flavor. If you love Cool Whip, you will really love the new frosting! It is so easy to use and it is delicious!

Mini Sandwich Cookie Cheesecakes {Recipe}

Did you know that COOL WHIP is currently having a Fan Dessert of the Month contest on their Facebook page until the end of December? All you have to do is upload a photo of a COOL WHIP dessert you created for a chance to win $500! (one Grand prize winner per month)

I decided to create a recipe with some of the flavors my kids love the most... cookies, cheesecake and chocolate! I put together these adorable Mini Sandwich Cookie Cheesecakes.


The great part about this recipe is that it requires no baking and very few, simple ingredients. I used Snackwell's cookies but you can change up the variety of cookie or chocolate according to your family's taste. Here is the recipe:


Mini Sandwich Cookie Cheesecakes

What you will need:
1- 8 ounce tub of COOL WHIP
1 package of Cream Cheese
12 SnackWell's Creme Sandwich Cookies
6 mini milk chocolate bars
2 tbsp melted butter
1/3 powdered sugar
1/2 tsp vanilla extract
12 aluminum muffin liners
Additional cookies, milk chocolate and COOL WHIP for garnish (if desired)

How you make it:
Blend the cream cheese, powdered sugar and vanilla extract until smooth. Crush 8 of the cookies until fine and mix with melted butter to make the crust. Press cookie crumb mixture into aluminum muffin liners and set aside. Chop up the remaining cookies and milk chocolate bars in small pieces and fold them, along with your COOL WHIP into cream cheese mixture. Spoon cheesecake mixture over each cookie crust and smooth it out. Refrigerate until firm and serve garnished with a dollop of COOL WHIP, a chunk of SnackWell's Creme Sandwich Cookie and a piece of milk chocolate.

My family instantly closed their eyes when they took the first bite of this yummy dessert. They loved it and have already requested I make it again. I really loved how nice the texture of the cookies were along with the smooth, creaminess of the cream cheese and COOL WHIP. If you try out this recipe, please let me know how you liked it.

Wordfull Wednesday

Hey guys! I just wanted to let you all know (since so many people have asked about it) that my COOL WHIP ad is officially in magazines! I picked up a copy of Every Day with Rachael Ray [June issue] yesterday. I am still in shock that the lady in the photo is ME!

I have received several text messages, email and FB messages from those who have seen it already. Looking forward to buying a few copies for my kids to have to show their future kids! Just thought I would share. Have a great second half of the week :)

It's always the little things

Time flies when you have children. They truly do grow up fast. As a mom, I try to do my best to make sure they feel special every day. With my daughters being teenagers it seems like quite a challenge sometimes. The good thing is they appreciate the littlest things. I love doing something unexpected for them when they get home from a long day at school. Many times I have purchased their favorite candy and left it on their bed so it is the first thing they see when they walk into their room. I stand at the top of the staircase to listen to their reaction. It's amazing how excited a teenage girl can get over some candy that cost me 2 bucks! Then having them run up the stairs to grab a big hug and thank me is the best feeling in the world. It makes my heart full to know that they are so grateful for the small gestures done out of love.


The other day I made this Creamy Oreo Pie for the girls. It was intended to be the dessert for a mom party I hosted in our home. I realized that all the moms might not want this sort of dessert and I asked the girls for other suggestions. You should have seen the look of sadness in their faces. Well obviously I still made the pie and I also made an additional dessert as well. I only had a few Oreos left to garnish the finished pie with and I plopped a few dollops of COOL WHIP on as well. I looked at it and thought that it looked a bit sloppy. You see, dolloping is not my talent. I just get it on there the best way I can! Of course the girls thought it was absolute perfection. My guests felt the same way too. It just goes to show that it does not take a whole lot to make your loved ones feel special.

Old school JELL-O treat

I wanted to share one of my most favorite desserts that is so easy to make and only requires 3 ingredients. Some of you might remember this classic JELL-O treat from back in the day...


What you need:
3 cups of boiling water
1 6 ounce box of JELL-O (any flavor)
1 small container of COOL WHIP

How to make it:
Add boiling water to JELL-O and stir until dissolved. Stir in COOL WHIP until completely mixed in. Pour into glasses or cups (I like using little "crystal cut" plastic cups) I recommend using a measuring cup with a spout to pour even amounts in your glasses/cups. Chill until firm at least 4 hours.

How to jazz up store-bought desserts with COOL WHIP

I love to bake as often as possible since my family really enjoys home-baked goodies. There are some weeks that get a bit too hectic with carpool, activities, doctor appointments and errands. I sometimes have to rely on store-bought desserts for my family. I wanted to share some very easy ways that you can add a little something to ordinary store-bought items to make them extra special with COOL WHIP.

I started off with some chocolate brownie cookies and a sour cream angel food cake that I purchased on sale.

I took the angel food cake and sliced it up. I added some sliced strawberries that were tossed with a little bit of powdered sugar to enhance the sweetness and topped it off with a dollop of COOL WHIP. Pretty easy huh? It took me no time at all and I am reconsidering the amount of time I spend baking! This is a great idea for entertaining. Less time in the kitchen means more time with your guests.


Next up I took the chocolate brownie cookies and made a cool and minty treat. I put a small scoop of mint chocolate chip ice cream on top of the cookie. I then added a dollop of COOL WHIP and sprinkled some brownie cookie crumbs on top. How cute it that?! My kids loved it and felt like they were eating a fancy dessert. The have already asked to have this dessert again but instead with vanilla ice cream, COOL WHIP and colored sprinkles.


You don't have to stress out about a dessert when you can take something so simple like a store-bought cake or pie and add a dollop of COOL WHIP along with your own special touches. I would love for you to share any ideas you have on how you can make store-bought desserts extra special.

COOL WHIP "What you add makes it" campaign update

Some of you might remember reading a post last month about my trip to New York City for a photo shoot for a campaign with COOL WHIP. This campaign is based on the notion that “what you add makes it.” As a mom, the little things you do, like adding a dollop of COOL WHIP to an otherwise simple cake or pie, turns ordinary into extra special. I am so happy that I was chosen for this campaign just for that reason! Everyone that knows me personally or through my online social networks know that this is all me. I really love the fact that COOL WHIP is doing a campaign using real moms. I'd say that is extra special!

I wanted to share the latest updates with you. If you go to the COOL WHIP Facebook page and click on the "Real Moms" tab you might see a familiar face or two.


I can't even describe what I felt like when I saw this. My family is thrilled and are looking forward to the ad launch in magazines due to hit newsstands in May for June issues. I will be featured in Every Day with Rachael Ray, Food Network, Cooking Light and Parenting Magazine School Years. To say I am excited is truly an understatement! Here is what my actual ad looks like:
You all have to check out one of the featured recipes for Strawberry Pie. It is so simple and does not require a whole lot of ingredients. This is a very impressive dessert and you will have your family and friends raving about it!



Strawberry Pie

Prep Time: 25 min. plus refrigerating | Total Time: 3 hours 25 min. (incl. refrigerating) | Makes: 8 servings.

What You Need:
1 HONEY MAID Graham Pie Crust (6 oz.)
3/4 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
1/2 cup ice cubes
1-1/2 cups strawberries, halved
1 pkg. (3.9 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup milk
2 cups thawed COOL WHIP Whipped Topping

Make It:
POUR milk into medium bowl. Add 1 pkg. (4-serving size) JELL-O Instant Pudding. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Spread onto bottom of crust. Add boiling water to gelatin mix in medium bowl; stir 2 min. until completely dissolved. Add ice; stir until melted. Let stand 5 min. or until slightly thickened. Meanwhile, arrange strawberries in single layer in center of pie. Cover with gelatin. Refrigerate 3 hours or until firm. Serve topped with COOL WHIP.

Momfiles in NYC for COOL WHIP

Hey guys! I wanted to share some exciting news with you about a fun campaign I was chosen to be a part of representing the COOL WHIP brand. They were looking for busy moms who do the extra special things for their families and they thought I fit the description well. So during the first week of January, I flew into New York City along with 3 lovely ladies to participate in a photo shoot for an upcoming ad that will debut in April in some major magazines for COOL WHIP.  How cool is that?! To say I was excited about getting to go to New York City would be an understatement. Although my trip was short, I enjoyed every minute of my time there. I won't lie; I was a bit afraid of flying by myself. I had not been on a commercial plane since I was a child and I flew on a small plane 18 years ago to go on my honeymoon. I felt like a newbie. The great part is it was not as bad as I was expecting and I am really glad that both flights went smoothly and on time. I was more afraid of the airport than the actual flying, but now I feel like a pro!
I knew I was getting ready to land in New York when I stopped seeing trees! 

The first evening I was there, a few of us went to a nice restaurant called Artisanal. I loved the atmosphere and the food and drinks were amazing! We even got to taste lavender and coffee rubbed cheddar and a few other fancy varieties. It was a great experience.

The next morning we all met up in the hotel lobby. I had already met Emily from @busymomblog. I finally got to meet Jenny from @PickyPalate and Ana from @spanglishbaby. What SWEET ladies! I could not have asked for a better group of moms to participate in this experience with. We hopped into the car that was waiting for us and headed over to the studio. We all enjoyed the sights and sounds of the busy city.

We all were so excited when we walked into the studio and were greeted by a very friendly bunch of beautiful people...producers, project managers, hair and make-up team, fashion stylist, photographer, assistants, food stylists and everyone else that made this project come to life. What a warm welcome we received! From there it was straight to either hair and make-up or wardrobe. To say this was my first time in this type of setting, I felt extremely calm and comfortable. I truly think the wonderful people I worked with had everything to do with it. Oh and the view of the city might have helped a bit too!

The girly girl in me really loved the hair and make-up part. I enjoyed chatting with Anthony and Jane while they did what they do best. I tell you what, I was feeling quite offended at the thought of coming back to South Carolina and having to do my own hair and make-up! What a treat it was to get made up, especially by such talented people who have worked on many celebs! All of the ladies looked absolutely gorgeous! I was second to go get my photos taken by the amazing Martin Schoeller. To be in a photo shoot with an awarding winning photographer who has traveled the world and shot many famous faces was incredible. He was awesome and quite entertaining. He really made any nervous feelings I had disappear immediately. I had so much fun! I am still in awe of everything and it still seems unreal!

Well I certainly could go on for days about my photo shoot for COOL WHIP but I will stop for now. I'll keep you updated on this campaign as well as share some fun desserts you can make for your family with COOL WHIP.
