I just found this recipe online and it sounds really good and healthy as well as easy for a child to help mommy make:
ReplyDeleteLinda from Eating Well, Living Thin, has a recipe for avocado deviled eggs that is so smart. After hardboiling, she basically takes the egg yolks and mashes them up with avocado , spices and a squeeze of lemon. She uses a teensy bit of mayo, but if you're not a fan just sub in some plain yogurt, or cream cheese.

My favorite way to eat eggs is Fried. But I do love them most ways. We have chickens so we eat ALOT of eggs if I have to buy eggs I always buy EggLand's because they are organic.

ReplyDelete1 egg
1 slice of bread
1 Tbsp of butter
Crack the egg into a bowl and set the bowl aside.
Use a 3-inch cookie cutter (circle, heart, star, or flower) to cut a shape out of the piece of bread.
Melt the butter in a frying pan over medium heat. Place the bread in the pan and fry it lightly on one side (you can also fry the cutout shape). Flip the bread over. Reduce the heat to low.
Carefully pour the egg into the cut-out hole in the middle of the bread. Cover the pan and cook for 2-3 minutes or until the egg has set in the bread "nest." For an over-easy egg, flip the egg and bread and cook it on the other side.

Eggs In A Nest
ReplyDeleteIngredients:
Bread
Eggs
Butter
Directions:
Get a slice of bread and cut out a circle in the middle (you can use a cup or large round cookie cutter). Lightly grease frying pan and place slice of bread in it. Gently break the egg into the middle of the circle and cook until lightly brown on bottom. Gently turn over and cook on the other side.

ReplyDeleteI like to make a faux souffle (emphasis on the faux) in the microwave, then served on a bed of shredded baby greens drizzled with honey.

ReplyDelete(recipe is 1 per kid)
1 slice bread
1 teaspoon butter
1 egg
salt & pepper - optional
Using a biscuit cutter (or a glass), cut a 2" circle hole in the middle of the bread.
Butter one side of the bread (including the cut out part).
Grill bread over medium heat until brown (grill cut out part next to slice). Flip bread over and break egg into hole. Top with cheese slice. Cook until egg is done to your liking.
Serve with cut out part of bread covering the "hole."

Eggs In A Cloud Recipe
ReplyDeleteINGREDIENTS:
4 slices bread
4 thick slices pre-cooked ham
4 slices Baby Swiss cheese
4 large eggs, separated
PREPARATION:
Preheat oven to 350 degrees F.
Lightly toast bread slices and place on a cookie sheet lined with parchment paper or aluminum foil for easy clean up. Top each slice of bread with a slice of ham; top ham with a slice of cheese.
Beat egg whites in a mixing bowl until fluffy and stiff peaks have formed. Mound egg whites attractively atop each slice of bread, forming a well in the center. Slide an egg yolk into the center of each egg white well. Place cookie sheet in the center of oven and bake for 10-15 minutes or until the egg whites are lightly golden and egg yolks are just set (egg yolks will be over-easy to over-medium in doneness). Remove cookie sheet from oven.
Using a large, sturdy spatula, plate eggs in a cloud immediately. Serve warm.
