I want to share a confession with you all. I sometimes get so exhausted from a full day of being a stay-at-home mom and homemaker that I leave dishes in the sink overnight or even forget to turn the dishwasher on. It happens and I usually end up regretting it! I can't stand dealing with all of the stuck-on mess the next day. I received a bag of the new Cascade Platinum Pacs to try out and the first thing that stood out to me was that it was their "Ultimate clean for dishes" and required no pre-rinse, fights grease and can even power through stuck-on food particles.

I am one of those moms that rinses the heck out of everything before putting them into the dishwasher. I decided to be a rebel and put crusty, dirty dishes in the washer for maybe the first time in my life! I even dared putting my plastic storage containers with a greasy film in as well.

I popped one of the fresh smelling pacs into my dishwasher and fired it up. I had no real expectations. It seems like most brands claim to do the same as the Cascade Platinum Pacs and I always end up with a film on my dishes. This time was very different. My dishes came out absolutely sparkling and gleaming! From each pot, pan, plate, glass and flatware... all of them came out beautiful!

You see this pot? It has stuck-on rice on the bottom and it is also 18 years old. Look how shiny and clean it is! I usually have to hand wash and scrub my stainless steel pots and pans. Cascade Platinum did the trick! I couldn't be happier! My previous dishwasher detergent will be getting the boot now that I have upgraded to Cascade Platinum.

With one teenage driver under my roof and one getting ready to get her license and hit the road this summer, it is a stressful time in a mom's life. I still haven't gotten over the fear of something happening when I am not in the car. It is so important to always talk to them about driving safety and be a good example to them. Coca-Cola's "Pay it Forward" for 2013 { Giveaway} #spon

Do you know anyone between the ages of 16-21 that is doing amazing things? Maybe they are high achievers in school, doing community service work or trying to start their own business. I know plenty of youth (including my own teenage daughters) doing positive things that I would love to see receive a great reward. I think about the amazing job my oldest daughter did as the chair of a service project she participated in for her school called H.O.P.E. 365. The organization collects food items, coats, money, hygiene items and even donation of blood to give back to the local community.  She spent numerous hours planning, organizing, standing outside in the cold collecting food donations and all of the countless things that went into making it a success.

Classic Cheesecake Recipe and Food Lion's Holiday Bake-Off Recipe Contest

It's my favorite time of year. The holiday baking season is here! Every year I bake my favorite cheesecake that the family loves. I found this recipe online many years ago and I promise, it is fool-proof. I have shared this recipe with a lot of family members and friends and they all love it and found that it was very easy to make. The thing I love about this recipe is you can totally make it your own. You could add cocoa powder to part of the cheesecake batter to swirl it in and make it fancy. Instead of vanilla extract you could use almond or lemon. You can serve it with fruit or plain (just the way I like it!).

Classic Cheesecake
Ingredients
2 packages (8 oz.) cream cheese, softened*
2/3 cup sugar
1 tablespoon lemon juice
1 teaspoon vanilla
2 eggs
1 Keebler® Ready Crust® Graham 2 Extra Servings Pie Crust (you can use a store brand or make your own)
1 cup sour cream
3 tablespoons sugar
1/4 teaspoon vanilla

Directions
1. In large mixing bowl beat cream cheese on medium speed of electric mixer until fluffy. Add 2/3 cup sugar, lemon juice and 1 teaspoon vanilla. Beat until combined. Add eggs, one at a time, beating until just combined after each addition. 2. Place crust on baking sheet. Spread cream cheese mixture in crust. Bake on baking sheet at 350°F about 30 minutes or until center is almost set. 3. In small bowl combine sour cream, 3 tablespoons sugar and 1/4 teaspoon vanilla. Carefully spread over cheesecake. Bake at 350°F for 5 minutes. Cool on wire rack for 1 hour. Refrigerate at least 3 hours. 4. Garnish as desired. Store in refrigerator. *NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.

Ever since school has been back in session, I have noticed something that is inevitable. We run out of printer ink way too often and I feel like I am having to run to the store to buy it frequently. When you add a spouse that's in college in the mix, we really run out of ink fast! Good thing Walmart carries HP ink cartridges that come in HP XL. I had seen them before in my cartridge size but was afraid it would not fit in my HP printer. It turns out the "XL" means the cartridge holds more ink. It fits in the same way the regular ones do. This means way more printing and less running out to buy more ink cartridges! 

It is so convenient to be able to stock up on ink cartridges while you are shopping for your groceries and household items. I found that the HP XL ink came in a large variety of sizes and the prices were reasonable. I received a $75 Walmart gift card from MomSelect to purchase HP XL ink for my printer and I had $14 left over to purchase a few items for the kids. Besides the ink cartridges, I was able to get 2 boxes of oatmeal for William, 2 bags of candy for the girls to take to volleyball, as well as a box of cake mix and powdered sugar to make cupcakes. You can't beat getting your printer ink for a decent price and being able to grab some other items at the same time with the money you saved. I think it is a great convenience for busy moms like myself!

It's summertime and this means ants. I think that every time it rains, I find ants outside and sometimes inside the house. Living in the south it seems like there is no getting rid of them! He squeezed some into a crack where some ants made there way into one of our windows and within an hour, all signs of ants were gone. It has been a week and it appears they will not be coming back!

I sent the ant baits over to my mother-in-law since she was complaining of ants making it into her kitchen area. Since she just put them in place yesterday, she will still have to give it a chance to work and hopefully get rid of those pesky ants for good.

This made me think of all the things I could do if I won the big makeover for my kitchen. $25,000 is a lot and even the 10k in cash is not too shabby.  My kitchen is very small so I could see trying to expand it just a bit. Of course my ancient cabinets and counter tops would have to go! I would even volunteer to be on the demolition team! I can just see the dark cherry wood cabinets with pewter fixtures and brand new charcoal gray granite counter tops. I would stick with a traditional double sink and a swanky new faucet with matching fixtures. So after all that is done I would go for all new appliances. I don't have to have the fanciest ones but I would LOVE a convection oven with a flat top range. Okay I admit, I entered the sweepstakes. It took me all of one minute. I would love love love to win!

Mini Sandwich Cookie Cheesecakes {Recipe}

Did you know that COOL WHIP is currently having a Fan Dessert of the Month contest on their Facebook page until the end of December? All you have to do is upload a photo of a COOL WHIP dessert you created for a chance to win $500! (one Grand prize winner per month)

I decided to create a recipe with some of the flavors my kids love the most... cookies, cheesecake and chocolate! I put together these adorable Mini Sandwich Cookie Cheesecakes.

The great part about this recipe is that it requires no baking and very few, simple ingredients. I used Snackwell's cookies but you can change up the variety of cookie or chocolate according to your family's taste. Here is the recipe:

Mini Sandwich Cookie Cheesecakes

What you will need:
1- 8 ounce tub of COOL WHIP
1 package of Cream Cheese
12 SnackWell's Creme Sandwich Cookies
6 mini milk chocolate bars
2 tbsp melted butter
1/3 powdered sugar
1/2 tsp vanilla extract
12 aluminum muffin liners
Additional cookies, milk chocolate and COOL WHIP for garnish (if desired)

How you make it:
Blend the cream cheese, powdered sugar and vanilla extract until smooth. Crush 8 of the cookies until fine and mix with melted butter to make the crust. Press cookie crumb mixture into aluminum muffin liners and set aside. Chop up the remaining cookies and milk chocolate bars in small pieces and fold them, along with your COOL WHIP into cream cheese mixture. Spoon cheesecake mixture over each cookie crust and smooth it out. Refrigerate until firm and serve garnished with a dollop of COOL WHIP, a chunk of SnackWell's Creme Sandwich Cookie and a piece of milk chocolate.

My family instantly closed their eyes when they took the first bite of this yummy dessert. They loved it and have already requested I make it again. I really loved how nice the texture of the cookies were along with the smooth, creaminess of the cream cheese and COOL WHIP. If you try out this recipe, please let me know how you liked it.
