Simple Cheesecake Recipe

Has anyone ever cooked or baked something that was so simple and inexpensive and your family could not stop talking about how insanely good it was? Then the day that you spent a good $40 for the one meal or dessert it was just "okay". That would be my family! It does not take much to please them and this recipe for individual cheesecakes is a crowd pleaser. Here is what you will need to make 12 of these little guys:

2- 8 oz packages of cream cheese
1 cup sugar
2 eggs
1 tsp vanilla extract (almond is good too!)
12 vanilla wafers
fresh strawberries or cherry pie filling

Beat the cream cheese until fluffy and add sugar, mix well. Add eggs one at a time, beating well and last add vanilla. Place one vanilla wafer in paper cup lined muffin pan(s). Spoon cream cheese mixture over wafers. Bake at 350 degrees for 20 minutes. You might be tempted to bake longer but don't! Leave in muffin pan; cover and chill overnight. Serve with fruit of your choice or by itself! ENJOY!!

You can double the recipe of even cut it in half and it comes out the same every time. I have been making these for over 10 years now and we love it~!
