Überrito Fresh Mex Opens First Restaurant in Columbia, SC

Überrito Fresh Mex (Überrito), dedicated to old school Mexican scratch cooking, announced that its first restaurant ever in South Carolina is officially open. The new Columbia Überrito located at 275 Park Terrace Drive, just off Harbison Boulevard and across from Walmart and Sam’s Club. The Columbia Überrito is owned and operated by local residents and business partners Ricky Patel and Deval Patel.

“We’re burrito, taco, bowl, and nacho-loving locals that live and breathe Columbia,” said Ricky Patel, co-owner of Columbia Überrito. “We knew as soon as we tried Überrito for the first time in Houston, we had to bring that authentic, scratch-cooked Tex-Mex flavor straight back to our community. One of the biggest differentiators for us will be our huge menu variety. From students at the University of South Carolina to state capital employees, office workers, families, or those just craving authentic Tex-Mex – there is something for everyone at Überrito. In fact, you could eat Überrito seven days a week and get something different each time, but my favorites are probably a chicken or shrimp burrito with spicy avocado and serrano ranch.”

Since signing the rights to develop Überrito in Columbia, both Ricky Patel and Deval Patel have been active brand ambassadors while their restaurant was under development. Deval’s husband Hiren (Harry) is managing day-to-day operations at the new restaurant. Their new restaurant is part of Überrito’s strategic growth plan that features new restaurant prototypes that accentuate design and operational enhancements such as a stronger focus on delivery, drive-thru, and outdoor dining, while highlighting a softer color palette, more lighting and a modern edge that boosts the customer experience.

“Now that we are open, we’re so excited to serve our community while giving back through our new Überrito,” said Deval Patel. “Because Columbia is and always has been a community that thrives when we work together, we’re going to do our part to also give back. When we learned that Überrito was interested in developing in South Carolina, we jumped at the opportunity to serve the best scratch-made Mexican food with my friend and business partner Ricky by my side.”

For nearly a decade, Überrito has drawn in crowds for its hand-made Mexican food rooted in a tradition of fresh, hot, and fast with a generous dash of Southwestern hospitality. Today, that set of core values, along with its tradition of quality, variety, and experience, still determines the restaurant’s direction and has kept the brand on solid footing, even during the height of the pandemic.

“There is something classic and quintessential about Überrito that everyone can relate to,” said Pete Pascuzzi, CEO of Überrito and MRI Heritage Brands, Inc. “Almost everyone can relate to a freshly made burrito or taco because people are driven by an emotional connection to our authentic food – it’s very strong and powerful. We’re thrilled that Ricky and Deval have now joined our team to introduce Columbia and the surrounding communities to Überrito. We’re ready to spread our fresh-is-first Überrito approach to the entire region.”

With one foot anchored in tradition and the other firmly planted in the future, Überrito has several original locations spread across greater Houston and its revamped model, upgraded training and support, state-of-the-art technology and new operational efficiencies are igniting the brand’s surge into Columbia and beyond.

“Our longstanding history of operating multiple restaurant brands across several states provided us with the runway and experience to position Überrito for success in Columbia,” said Pascuzzi. “There was a fundamental shift happening in consumer dining habits prior to 2020, which the pandemic accelerated. Überrito is a fresh, fast and friendly environment that has adapted to today’s guest, which allows our owners to take full advantage of dine-in, take-out, delivery, drive-thru, and pick-up lane options.”

The new Columbia Überrito is located at 275 Park Terrace Drive, Suite 800, Columbia, SC. 29212. The restaurant will operate Monday – Sunday, from 11:00 a.m. to 9:00 p.m. To learn more about Überrito visit uberrito.com.

The Best Plants To Help Keep Mosquitoes Away

It's crazy to think that although we are in the month of April, many parts of the country are getting late snowfall and freezing temperatures. We have experienced all four seasons in recent weeks. What surprises me is although we have only had a handful of days in the lower 80's, we have seen swarms of tiny mosquitoes. Since we spend a lot of time on our back deck, we have to do all we can to keep those pesky buggers away.

Last year we tried a few plants that were recommended by our local garden center, and we added a few others. Keep in mind that some of these plants can be hard to find at the big chain places, so you may have to go to a local specialty place for them like we did for some. The plants below have worked for us, which says a lot since mosquitoes can find me in a crowd of a thousand people!

Take a look at these plants that help keep the mosquitoes away

Citronella (also called the mosquito plant)
This plant gives off a citrusy scent that mosquitoes hate. We find this plant is most effective when you pluck a leaf or two off, rub it to release the natural oils, and wipe it on your exposed areas like your legs and arms. This one really does work well! I have yet to get single bite if I have this around. We found it at a local garden center, but you can buy them here as well.

Marigolds
The great part about these is you can find them in almost any store that sells plants. They are super affordable, come in different colors, and work great in garden beds, pots or hanging baskets.

Rosemary
This herb is very fragrant so it chases mosquitoes away. I can't stand the scent at all myself. Rosemary is a hardy plants that requires no maintenance aside from watering. They can take full sun as well.

Other recommended herbs are: basil, peppermint, spearmint, and garlic chives.

Eucalyptus
This plant emits a fragrance that chases pests away. We bought a couple small pants called silver drop that we planted in pots. They will only get to be a few feet tall, which makes it good for containers. We might consider getting a larger tree to plant in the ground at the bottom of our deck. We use eucalyptus in our home, so it would be great to have a full size tree.

Geranium
This flower plant is a stunner! I have read that they can help repel mosquitoes, so of course I had to buy a plant to put in a pot to admire. I'll report back to let you all now if it worked or not. At least it's pretty, right?

So far we have plenty of potted plants on our back deck and our front door entrance to keep mosquitoes from trying to enter our home. We are hoping the summer heat isn't too hard on them. The only real maintenance these plants need is proper watering, a little plant food, and the correct amount of sun. Too bad plants only work for small areas.

In addition to having potted plants for repelling mosquitoes, we also use Tiki torches, candles, and our new favorite, citronella mosquito repellent sticks. They are long-lasting and work really well. It's nice to be able to grill out, without getting eaten alive. If mosquitoes are bugging you, I suggest trying any of the recommendations in this post.

Local Food Find: Famous Toastery Columbia, SC

For several months now, I have been following a restaurant on Instagram called Famous Toastery Columbia. For some reason I assumed that it was located in downtown Columbia or even further away. Turns out that it is super close to where I lived, so the husband and I went for a breakfast date. Being newbies, we were overwhelmed by the menu. They have a lot of options for breakfast including everything from shrimp and grits, to pancakes, French toast, and omelets. Unlike most breakfast joints, Famous Toastery serves up the perfect brunch-worthy cocktails. Deciding what to order was hard.

My husband already had the idea of pancakes stuck in his head so he went with the apple cinnamon pancakes paired with turkey sausage, and a glass of freshly squeezed orange juice. The word lobster caught my eye from their weekend special menu, so I went with the lobster scramble with potatoes on the side. I also splurged and got a Bloody Mary because I was feeling a little fancy.
Isn't this cocktail so pretty? It was so delicious and full of zesty, spicy goodness.
Our server brought over a small basket of homemade cornbread with a delicious apple compote type concoction. We decided to only take a nibble to save room for our meal. Trust me, I would have devoured all three pieces if I could! We didn't have to wait very long for our entrees to come out. Everything was presented so nicely and the server was super sweet and accommodating.

I'm a huge potato lover so I had to take a bite of that first. Oh man, it was perfectly cooked with the right amount of seasoning. The lobster scramble was everything I hoped it would be. It had nice pieces of lobster nestled inside the soft scrambled eggs, along with some veggies. I loved this dish! The hubby was so happy with his pancakes and turkey sausage. We both were impressed with that made-from-scratch taste you normally don't get from most chain places. We were also pleased to see how many non-pork and non-meat options were available. Perfect for vegetarian and vegan lifestyles.
We will definitely head back to Famous Toastery, northeast Columbia location to try out some of the other menu items. The food, drinks, and service were all excellent. It's a perfect spot for a girl's brunch. I know my daughters will love it! If you're ever in Columbia, SC, you should check out Famous Toastery for yourself! There are also locations in a few other states as well.

I did not receive any incentive to post this review. We simply enjoyed our meals and wanted to share our review with you. Thanks for stopping by today.

South Carolina Is The Hot Spot For The 2017 Total Solar Eclipse

In a couple short weeks, school will resume around these parts. My middle girl will begin junior year at the University Of South Carolina, the husband will be in grad school working on his MBA, and the littlest one will start fourth grade in his third year being a home schooler. We are all so sad that the summer break is coming to an end. We are planning to have one last hurrah by having an Ismail Party of Five-Total Eclipse Party. Okay, okay, it's not as fancy as I'm making it sound. We will be here at the house waiting in anticipation of viewing the eclipse. It will be the perfect time for the five of us to hang out and witness what will be a historical event.

It turns out that Columbia, South Carolina is one of the top spots in the country where the view is slated to be at 100%! Our local news has estimated over 1 million people will make their way to our state to partake in seeing the eclipse. Hotels are sold out everywhere and they say traffic will be crazy all over. That's a great thing for South Carolina businesses, for sure. If you aren't sure if your area will be able to catch any of the action, you can check here by entering your zip code.

The most important thing we did to prepare for the eclipse was to first purchase eclipse safe glasses, which we did a month ago. Little William was listening to a news report in regards to viewing the eclipse safely and insisted we must have the proper eye-wear. Here are the ones we got. Lucky for us, they came in a pack of 5. Perfect for our family!
Since we purchased them early, they were very inexpensive. I have noticed a big rise in the cost all over. I guess people are recognizing how dangerous it can be to your eyes if you get too much exposure to the direct sun. Let's hope these glasses work because when you put them on, you can't see a thing! Of course William had to be the first to try them on.

We are so excited to have the opportunity to view the total solar eclipse together. I hope that you live in an area so you can catch a glimpse, too. Now we will keep our fingers crossed that the weather will hold up! Will you be participating in this big event?

Columbia, SC Food Finds- Tijuana Flats' New #FlatOutrageous Menu

Me and the hubby were invited to an exclusive tasting event at the all new Tijuana Flats located not too far from our home. We were greeted immediately by the super friendly staff upon walking into the restaurant. The first thing that really stuck out was the eclectic, artsy vibe. There was so much to look at including wall murals, artwork, painted ceiling tiles, and more. Tijuana Flats was started back in 1995 and has grown to 129 stores and counting.

We sat down (along with the other guests) with the area marketing coordinator, Sarah Jones to get a little background on how Tijuana Flats came about. You can tell she really loves the company and was willing to answer our questions in depth. The reason they hosted the tasting event was to introduce their latest Flat Outrageous menu items.

Of course you can't dine in a Tex-Mex restaurant without the nachos to start with. All of their dishes and sides are scratch-made. The chips are so crisp and light and the queso, salsa, and guac are all so fresh and delicious! We were told that their recipes were recently tweaked and I think they need to keep it this way. That guac stole my heart. It was so rich, chunky, and perfect all at the same time. Everyone was a bit surprised that the queso was yellow compared to most places that serve a white queso. I will say that it is one of the best I have ever tried. Yum!
I had a refreshing Sangria to go along with the hoards of food they brought out to us. We were warned from the beginning and they came with it! Whew, so much delicious food! The first few entrees we tried from the Flat Outrageous menu were the Lime Steak, Crispy Baja Fish, and Jerk Chicken Street Tacos. Although they were all so good, the lime steak was our favorite! The jerk chicken was very spicy for those who crave a little more heat. I really enjoyed it!
One of the BEST parts is their hot sauce bar. There are so many to choose from with different levels of heat. The curry sauce and Georgia peach sauces were my faves. The great thing is that you can purchase their sauces online or in-store.

Their signature sauce is called "Smack My Ass And Call Me Sally". It packs quite a punch! And the name is so fun! haha! We tried samples of several sauces to see what worked best with each dish. We were told that some sauces require signing a waiver- YIKES!

The last entrees we tried included the scrumptious Philly Cheesesteak Flautas and the Bangin' Chicken Tostadas. They were both absolutely deliciously crispy and full of flavor. The Philly Cheesesteak Flautas came with a generous serving of queso for dipping- mmm mmm! Of course no meal is complete without a sweet bite afterwards, and their Cookie Dough Flautas were ridiculous! Served with chocolate sauce for dipping, this dessert is a chocolate lover's crispy, crunchy, chocolaty dream! So good!

The Flat Outrageous menu really is worth trying and the prices overall are reasonable. If you are located near one and have not been, you really need to check it out. I know my daughters and their friends will enjoy Tijuana Flats' Tex-Mex dishes. They plan to stop by soon. One last thing that I wanted to share is their charitable side. Their "Just in Queso" Foundation gives back to communities benefiting children and our brave military in their time of need.

We want to send a warm thank you to the Columbia, SC store manager Crystal Richardson and Will Huggins for hosting us! They are located at 106 Percival Rd. Ste 200 Columbia, SC 29206. Stop in a see them if you're in the area or place your online order for takeout. Their entire staff is so friendly and accommodating. You won't be disappointed! Follow Tijuana Flats on Facebook, Insta, and Twitter for delicious updates :)

Thanks for reading and as always, all opinions are 100% my own xo

Kimchi Korean Cuisine in Columbia, SC Review

I was out a couple weeks ago with my husband and we stumbled across a new Korean food place in our area called Kimchi. I love, love, love all Asian cuisine so I knew it wouldn't be long before we headed over there to give it a try. This place is very cozy and you are immediately greeted as you walk in the door. The sweet lady who greeted us welcomed us and said, "come on, come eat". She was everything you would expect from a Korean mom or grandmother. So warm, sweet and ready to feed you. We previewed the menu beforehand so we already knew what we wanted to order. We had William with us and he went with the vegetable fried rice. Me and the hubby got the Bulgogi (Korean barbecue) which came with the most perfect sticky rice.

Of course you can't have an authentic Korean meal without all of those glorious vegetable side dishes (which comes with your meal). You get everything from kimchi, pickled daikon radish, coleslaw, bean sprouts and the most ridiculously delicious potato salad I have ever had. I wonder if I can order a pint of it? I'm serious, it's just that good.

This was the lunch special and it was only $7.99! Oh and I promise, you will be stuffed! The food was so delicious and fresh. William's veggie fried rice (not pictured) was made with all fresh vegetables including tiny pieces of zucchini. He loved it and only got half way through his meal because he was getting very full. They have soft drinks and sweet tea for $1.50 and have a wide variety of delicious offerings on their menu. They have plenty of vegetarian and seafood dishes for those who don't eat meat. We plan to return again to try out some other items. Their prices at lunch run about $7.99 for an entree and you can even get a lunch or dinner box to go. Their dinner prices range from about $10-$30 depending on what you get since they have many specialty dishes.

Kimchi Korean Cuisine is located at 1807 Decker Blvd #6 in Columbia, SC near the Hyundai Oriental Market. Their phone number is 803-790-7778. You can place a take-out order.

This is NOT a sponsored post. I simply wanted to share the good experience I had in case you are local and looking for something new to try. Please consider sharing this post with a friend!
