Eggland's Best Giveaway {Closed}

Winner is #181 Donald~ Congratulations!

It's no secret that my family loves Eggland's Best eggs. We are self-proclaimed egg snobs and will only buy the Eggland's Best brand. I know it sounds crazy but I have never seen such clean eggs. I am not talking about the shell, but the actual egg. They even taste clean! Knowing that they are high in Vitamin D, B12 and E as well as a good source of Omega 3 and Lutein make then even better. Oh and they have 25% less saturated fat than regular eggs! I was offered some eggs from a family member recently for free and the first question I asked was "Are they Eggland's Best?" I found out they were not, so I politely passed on them.

We are going to be hosting an Eggland's Best "Plate Date Brinner Party" tomorrow evening. We will prepare some dishes to share with our guests that incorporate eggs of course! I will be posting details of the party next week along with recipes and photos. Be sure to check back! *Edited* Post is up!

  2. I just found this recipe online and it sounds really good and healthy as well as easy for a child to help mommy make:

Linda from Eating Well, Living Thin, has a recipe for avocado deviled eggs that is so smart. After hardboiling, she basically takes the egg yolks and mashes them up with avocado , spices and a squeeze of lemon. She uses a teensy bit of mayo, but if you're not a fan just sub in some plain yogurt, or cream cheese.

  14. Eggs in a Nest
    1 egg
    1 slice of bread
    1 Tbsp of butter

Crack the egg into a bowl and set the bowl aside.

Use a 3-inch cookie cutter (circle, heart, star, or flower) to cut a shape out of the piece of bread.

Melt the butter in a frying pan over medium heat. Place the bread in the pan and fry it lightly on one side (you can also fry the cutout shape). Flip the bread over. Reduce the heat to low.
Carefully pour the egg into the cut-out hole in the middle of the bread. Cover the pan and cook for 2-3 minutes or until the egg has set in the bread "nest." For an over-easy egg, flip the egg and bread and cook it on the other side.
I found this one on one of my favorite sites, Family Fun.

  131. Eggs In A Cloud Recipe

    INGREDIENTS:
    4 slices bread
    4 thick slices pre-cooked ham
    4 slices Baby Swiss cheese
    4 large eggs, separated

    PREPARATION:

Preheat oven to 350 degrees F.

Lightly toast bread slices and place on a cookie sheet lined with parchment paper or aluminum foil for easy clean up. Top each slice of bread with a slice of ham; top ham with a slice of cheese.

Beat egg whites in a mixing bowl until fluffy and stiff peaks have formed. Mound egg whites attractively atop each slice of bread, forming a well in the center. Slide an egg yolk into the center of each egg white well. Place cookie sheet in the center of oven and bake for 10-15 minutes or until the egg whites are lightly golden and egg yolks are just set (egg yolks will be over-easy to over-medium in doneness). Remove cookie sheet from oven.

Using a large, sturdy spatula, plate eggs in a cloud immediately. Serve warm.
