1 cup sugar
1 tsp vanilla extract (almond is good too!)
12 vanilla wafers
fresh strawberries or cherry pie filling
Beat the cream cheese until fluffy and add sugar, mix well. Add eggs one at a time, beating well and last add vanilla. Place one vanilla wafer in paper cup lined muffin pan(s). Spoon cream cheese mixture over wafers. Bake at 350 degrees for 20 minutes. You might be tempted to bake longer but don't! Leave in muffin pan; cover and chill overnight. Serve with fruit of your choice or by itself! ENJOY!!
You can double the recipe of even cut it in half and it comes out the same every time. I have been making these for over 10 years now and we love it~!
